TAPROOM UPDATE - MAY 2021

TAPROOM UPDATE - MAY 2021

Easily the most common question we get asked about the Taproom is when is it going to open? 🥁🥁🥁 Mid June is the aim, all things going to plan.

If you’ve been following us on our FB or Instagram you may have seen some Taproom updates already but let me take you through what’s been happening.

The Taproom build began in January 21 and it’s been extremely busy on site since.

January and February involved running services, set out and framing for the bar,

kitchen and toilets.

March and April saw the circle feature wall built, as well as the external construction of the bar.

The month of May has seen the Taproom really take shape. As part of the works for this month the kitchen was fitted out with all the commercial equipment needed to allow us to cater for a modern Australian menu.

Introducing our Venue Manager and Head Chef

It’s a pleasure to announce our Venue Manager Alex Henderson and Head Chef Paul Kasten.

About Alex

Alex has worked in the Melbourne hospitality industry for sixteen years. Growing up in Fitzroy, he always had an appreciation for good hospitality and knew that creating great experiences for customers was what he wanted to do. His first “craft’ beer was a pint of Little Creatures Pale at Rooftop Bar in 2007 and he has been in love with hops ever since. Recent venues include the Terminus Hotel in North Fitzroy, the Dan O’Connell in Carlton and 3 Ravens Brewery in Thornbury.

About Paul

Paul has been a professional chef and a serious beer fan for twenty years. A graduate of the prestigious New England Culinary Institute in the US. He worked at Wildwood Restaurant in Portland, Oregon before relocating to Melbourne in 2015 and has headed the kitchen at notable venues such as Stomping Ground Beer Hall and Host Dining.

At Deeds Taproom and Kitchen, Paul will implement a seasonal menu that toes the line between serious and approachable while showcasing a range of techniques for the use of beer and beer ingredients in fine cookery.

Keeping the old in the new

Lastly, I’ll leave you with a great example of how we’ve tried to incorporate the old building into the new. Back in 2018 when we replaced the original roof, we kept all the old wood purlins with the intent to turn them into furniture for the Taproom. Well after 3 years in storage here they are:

Our old roof purlins have never looked better

We are very much looking forward to having you join us when we finally open our doors, its very exciting for us coming to the end of the Taproom build, its been our dream since 2015, with many challenges along the way.

Lights on

See you in mid June

Cheers 🍻

Pat
